Description
Nisin Z is a bacteriocin polypeptide antibiotic known as a lantibiotic. Nisin is produced by gram-positive bacteria to reduce competitive strain from other gram-positive bacteria.

TOKU-E also offers nisin A (N013), the more common variant of nisin Z.

    Mechanism of Action

    Nisin Z is toxic against other gram-positive bacteria by forming pores in the membrane leading to cell death.

    Spectrum

    Nisin Z is effective against a broad range of gram-positive bacteria and is not toxic to gram-negative cell membranes.

    Can be used as a food preservative, especially in dairy product.
